Aspiring Baker Alex Wong Grows Through Internship at From the Hearth Bakery

March 26, 2025 Tre Keys

REDDING, Calif. — For Alex Wong, baking isn’t just a job—it’s a passion. As an intern at From the Hearth Bakery through Mains’l Services in Redding, California, he has been honing his skills in the culinary field, learning everything from shaping dough to placing baked goods with precision.

“I like trying new foods and learning new skills,” Wong said when asked about his inspiration to pursue a career in baking.

Throughout his internship, Wong has developed valuable techniques that contribute to his growth as a baker. “Learning where to place things, molding out dough, and making pies—it’s all part of the process,” he explained.

One of the most rewarding aspects of his internship has been improving his ability to follow recipes and measure ingredients accurately. “It’s getting there,” he said. “We use scales and measure our flour.” Among the more challenging tasks, Wong noted that cutting sourdough from the mixer requires careful technique.

Wong also emphasized the importance of teamwork in a bakery setting. “Every day is teamwork-based,” he said. “Good coworkers are respectful, and I try to contribute by staying on task and waking up on time.”

Beyond baking, Wong’s role at From the Hearth Bakery is expanding as the business opens a new location with a storefront. With his positive attitude and natural ability to engage with others, he is now training to greet customers and work the register—a step forward in his journey toward full-time employment.

“They’re excited about getting him trained on greeting customers and handling transactions,” said Kimmy Wally, a job developer who has been working with Wong since the beginning of his internship. “It’s a new aspect for him, and he’s really excited about it.”

His internship experience aligns with his studies at Shasta College, where he is enrolled in the culinary program. “Right now, I’m doing dining room service, greeting guests,” he said. “I’ve also worked as a busser and runner.”

Wong credits his education with reinforcing his workplace skills. “Going to school for my passion has helped me become a better employee,” he said. “I’m learning the same basic strategies of what it’s like to be in service.”

Wong is also an active participant in the College Plus program, which supports students in developing vocational and independent living skills. Through this program, he has had the opportunity to lead culinary workshops, including demonstrations on making parfaits and pot stickers. “It’s been a great way to share what I’ve learned and help others develop their skills, too,” he said.

As he prepares for the transition from intern to full-time employee, Wong is focused on gaining confidence and financial awareness. “I’ve been learning how to handle money,” he said, a crucial skill as he takes on more responsibilities in the bakery’s new location.

Looking ahead, Wong has ambitious goals. “I want to open my own bakery one day,” he shared.

With a dedication to his craft, a strong support system, and a growing set of skills, Wong is well on his way to making that dream a reality.
